Anyone who prepares or handles ready to eat food is
required by the law to be adequately trained for the
job.
Our Food and Safety
team is now running courses to make sure that you and your staff
have up-to-date hygiene knowledge and comply with your legal
responsibilities.

We can make arrangements to support candidates with additional
requirements, please mention this when booking. Examples include
oral examinations for people with learning disabilities or those
whose first language is not English and provision of readers and
writers can be offered subject to approval from the awarding
body.
The course will give you a Level Two Award in Food Safety in
Catering qualification from the Chartered Institute of Environmental
Health (CIEH), previously known as Basic Food Hygiene.
Courses are generally held on a monthly basis at the
Town
Hall in Weston-super-Mare, and last approximately six hours.
The content of the course covers:
- Food safety hazards – chemical, microbiological and
physical
- Food borne illness and food poisoning
- The law and enforcement of the legislation
- Food handlers legal obligation
- Simple microbiology, toxins, spores, growth and
death
- Prevention of contamination
- Effective temperature control, storage, cooking,
reheating
- Food hygiene practices
- Pest control, premises and equipment
The final part of the course is a 30 question multiple choice
assessment paper.
